irish creme, hannah-ized

once in a while this will be my foodie space. i’m making a Bailey’s Irish Creme pie for my studio dance party and being a skinflint/soon-to-be-graduate-student i am making my own alcoholic content.

makes about 4 cups

  • 1 cup light cream
  • 1 can (14-ounce) sweetened condensed milk
  • 1+2/3 cup Irish whiskey
  • 1 teaspoon instant coffee
  • 2 tablespoons Hershey’s chocolate syrup
  • 1 teaspoon vanilla extract
  • 1 teaspoon almond extract

with my modifications

  • 1-cup-minus-1-Tbsp heavy cream for a richer texture. see volume adjustments below.
  • 1 can (14-ounce) sweetened condensed milk
  • 1+2/3 cup Irish whiskey. Jameson’s, courtesy of Emily. it’s a lot of whiskey.
  • 1 Tbsp strong cafe-latte: i only had real coffee, so i brewed 2 Tbsp of coffee in 2/3 cup of milk, strained out the grounds, allowed the cafe-latte to cool to room temperature and added 1 Tbsp of this to the creme, making up for the omitted 1 Tbsp of the heavy cream. i drank the rest of the cafe-latte with the 1 Tbsp of heavy cream. hello, diabetes.
  • 2 tablespoons Hershey’s chocolate syrup. be generous.
  • 1 teaspoon vanilla extract
  • 1 Tbsp Amaretto, as i didn’t have almond extract. this is a very Irish concoction.
  1. Combine all ingredients in a blender and blend on high speed for 30 seconds.

  2. Bottle in a tightly sealed container and refrigerate.
  3. Shake before using. Will keep for up to 2 months.

this will be a very happy pie.

  1. Sounds yummy!
    Next time you need instant coffee, I usually have some on hand for visitors (I don’t drink it, myself). :) I also have almond flavoring. Even so, your modifications sound like they work just fine!
    I’m considering making some kind of green pie – perhaps avocado cheesecake, or mint creme. Whichever I decide, I’ll probably test it on my coworkers on Pi Day. Thoughts?

    • either of those sound delicious.
      have you ever tried pistachio cheesecake? cousin of the pistachio ice cream.
      i might borrow your co-worker-taste-testing idea, actually. now, how does one avoid getting into trouble by bringing alcoholic dessert to work. hmm.
